The way the light bounces off of the color white works wonders in creating a sense of more space.  The darker colors can make the walls feel like they are closing in while white has the opposite effect.  When white is used for both cabinets, walls and appliances, it can seem as if they have no end. Adding color is how you create an end or a boundary.  Use varying shades of white to avoid having it look too much like a hospital.

Mirrors on walls, in recesses, as a backsplash or on the back of a door are one of the best ways of creating the illusion of the space going on forever. There are many ways you can use mirrors to expand the smaller kitchen, at least in the mind's eye.
